
Thai food is not always spicy. The Grilled Lemongrass Chicken from our diet guru, NutriProfessionals, is a great appetizer that gives aromatic lemongrass flavour and easy taste that everyone can enjoy. It's light, yummy and so easy to cook.
Ingredients for Grilled Lemongrass Chicken
Serves 4
3-4 large stalks fresh lemongrass
2 teaspoons fish sauce
2 teaspoons soy sauce
2 teaspoons sugar
2 teaspoons chopped garlic
1-2 teaspoons lime juice
3 tablespoons olive oil or rice bran oil
2 chickenbreasts, no skin
Directions:
1.Chopped the lemongrass and pound with a mortar and pestle or put it in a blender to chop for a few seconds. Spoon the chopped lemongrass into a bowl and mix with the fish sauce, soy sauce, sugar, garlic, lime juice and oil.
2.Pound the chicken to thin. Marinate with the ingredients from #1 for at least 1 hour or up to 8 hours in the refrigerator.
3.Heat the grilling pan or a non-stick frying pan. Grill the chicken until cooked through and nicely brown on both sides.
4.Serve with vegetables or salad.
